Raw Stuffing and Cranberry Sauce
Raw Cranberry Sauce
1.5 cups raw cranberries
Juice of 1 orange
Small chunk of ginger
Method: Pulse in food processor until desired texture is reached. I intended to add a sweetener to the cranberry sauce but I tried it first and I loved the flavor without any added sweetener. Feel free to add a date or some raw honey if it is too sour for you.
6 cups pecans ground
3 cups cauliflower ground
4 large carrots diced
1 small onion diced
6 stalks celery diced
1 small leek diced
1/4 cup olive oil
1-2 Tbs fresh sage
1-2 Tbs fresh thyme
Salt and pepper to taste
1. Combine first 6 ingredients in a bowl and mix well.
2. Blend olive oil, sage and thyme in a blender and pour over.
3. Thoroughly combine the liquid ingredients with the dry
* you may add as many herbs as you want but 1-2Tbs seemed like the minimum for great flavor.
