Pesto Sauce over Kelp Noodles
I love eating kelp noodles. They are full of iodine so it is a great food for the thyroid! They are a bit wiry so I soak them overnight starting out in hot water and again in the morning in hot water. Usually that does the trick. Of course, you can keep soaking them until they are your desired consistency.
Raw Pesto Sauce over Kelp Noodles
1 cup of raw cashews soaked (3-4 hours)
1 handful of organic basil
Juice of 2 big lemons or a little less than ¼ cup
¼ cup of nutritional yeast
3 organic garlic cloves
½ teaspoon of sea salt
2 tablespoons of Nama Shoyu
½ cup of filtered water
¼ teaspoon of black pepper
Tip: You can add more salt for your desired taste. You could also use zucchini squash noodles as a substitute. Add tomatoes or any other of your favorite veggies on top. I warm mine up in the dehydrator and it tastes amazing!
